¼ cup shallots, chopped
1 lb. chicken liver
1 garlic clove, minced
1 teaspoon thyme
1 teaspoon anchovy paste
2 tablespoons capers
¼ cup brandy
¼ cup cream
Salt and pepper to taste
Breads to serve
Instructions:
Remove the fat from the connective tissue of the liver.
Add the butter to a pan and toss in the shallots to sauté.
Add the liver and brown it on both sides.
Toss in the garlic, thyme, capers and anchovy paste and combine.
Pour the brandy to deglaze the pan and add the cream and combine.
Add it to a blender and whizz till smooth.
Serve with breads. This recipe can stay fresh in the fridge for a week.
